With artisan crafted
standards as their goal, they have created proprietary processes
and use custom engineered equipment in their modern
manufacturing facility to make products that best replicate
handmade pasta. In keeping with their culinary tradition,
their
creative inspiration begins in the kitchen. Their
state-of-the-art kitchen is outfitted with multiple zone
ovens, high heat kettles, in-line grills, tilt skillets and
chillers that allow them to use the classic culinary
techniques that are used in a restaurant. Once their
ingredients are prepared, they then use specialized blending
equipment to preserve the identity of the rough chopped
ingredients. Finally, using custom pumping equipment and
filling equipment, they fill their pasta with large,
identifiable chunks of meat, vegetables and seafood. Their
dough is kneaded until pliable and silky to the touch and
the rolled up to five times to ensure an extra thin pasta
shell for every one of our more than 30 different shapes.
